Ingredients
| 1 | orange | |
| 6 | oz | smoked salmon |
| 1 | tomato | |
| 2 | green onions | |
| 2 | T | basil (fresh) |
| 1 | T | olive oil (extra virgin) |
| 1⁄2 | t | black pepper |
| 1⁄4 | t | salt |
| 8 | cucumber (short) | |
| 1 1⁄4 | c | yogurt (whole fat) |
Notes
Make sure to check the salmon package to make sure it's wild salmon, not farmed salmon. Farmed salmon is very low in healthy fats, and the fish is fed food with artificial coloring to actually make the flesh look pink like the real thing.
Instructions
Zest orange over a bowl. Cut away rind. Section orange over bowl, removing membranes and catching juices and sections in bowl. Mix in salmon, tomato, onions, basil, oil, pepper and salt. Divide salmon mixture evenly among cucumber boats. Top each boat with 1 1/2 teaspoons whole milk yogurt.
